Was craving this and decided to seek out a healthy version of the recipe. This recipe was so good and worth making again.
Preheat oven to 375 degrees.
1 can Cannellini Beans, rinsed/drained
1 package artichoke hearts, in water, drained
1 teaspoon onion powder
1 teaspoon garlic powder
3-4 cloves garlic
1 teaspoon Salt (I used Benson’s Table Tasty Salt-Free alternative)
4 Tablespoons Nutritional Yeast
One Lemon, squeezed
4 cups fresh spinach
1) In a food processor, pulse all ingredients except spinach
2) Add spinach and continue pulsing until desired consistency (think chunky salsa)
3) Place in casserole dish and Bake for 25 minutes or until starts to brown
I also added the garnish seasoning to the top of crushed cashews, sweet paprika, and ground pepper.
Here is tonight’s dinner mostly roasted in the oven since felt lazy. If you cover with plenty of veggie broth, this will keep your veggies moist while adding in a natural flavor. This didn’t need any seasoning at all.
Oven veggies = Potatoes, Onions, Carrots. Purple Sweet Potato (on side)
Stove top veggies = Kale, Spinach, Garlic, Tomatoes
Assuming you have the ingredients, this is such an easy one that takes less than 5 minutes.
Brown Rice (warm)
-Wrap it like a taco and enjoy.
This is may look a little strange, but give it at try since it tastes very good.
1) Fully cook a baked potato in the oven or microwave
2) Place on waffle iron and cook for approximately 2 minutes
Please ensure the baked potato is fully cooked before trying to put it on your waffle iron or you may break it. If you use refrigerated cooked potatoes, make sure to put in the microwave for about 90 seconds prior to putting on iron. Top with salsa and it’s delicious.
