I love adjusting the recipe slightly since Tofu scramble is really so versatile. I typically cook the veggies which take longer in the oven for ease.
Version today had the following ingredients:
Oven veggies: Onions, carrots, beets (cooked in veggie broth)
Stove top veggies: Spinach, Garlic cloves, 1 block Tofu pressed
Spices: Chipotle powder, Turmeric, sesame seeds, ground pepper, nutritional yeast, basil
Normally I always add potatoes, however today was out but luckily had some purple sweet potatoes to cook and serve with it.
