I just threw some veggies in with a little veggie broth and some Indian spices (cumin seeds, cumin powder, garam masala, ginger powder, turmeric). Bake in oven covered on 400 degrees for about an hour. Super easy!
I was going to add frozen corn and diced tomatoes too but forgot, yet it was still great. Use any combo of veggies you like, but I suggest not to leave out cauliflower, garlic, or carrots since it really makes the dish.
