Some of you might know I’m slightly obsessed with finding the best recipe for waffles. Today’s experiment was my favorite so far. They turned out light and
fluffy and you really have to be open minded when you see the ingredients.
The following is oil free, sugar free, egg free, and dairy free but you would never know it. They are super easy to make if you use my suggested blender option.
1 ¼ cups whole-wheat flour
½ cup chickpea flour (also called besan)
1 Tablespoon cornstarch
1 teaspoon baking powder
2 cups Water
¼ cup dates, packed
1 ½ Tablespoons Almond Butter
¼ cup Peanut Butter
1 teaspoon vanilla extract
1) Mix all Dry Ingredients in bowl. Set aside
2) Blend all wet ingredients in high powered blender until smooth
3) Pour blender ingredients into bowl with dry ingredients and mix thoroughly
4) Cook using waffle iron as usual
I topped mine with Strawberries and pure maple syrup. Next time I’ll probably try to incorporate blueberries into the batter somehow.
