This was my first stab at making an Ethiopian dish with minimal effort. Since I’m using the Instant Pot (Electric Pressure Cooker) my prep time is roughly only 5 minutes. It goes best with injera (Ethiopian sponge bread) which can be purchased individually at any Ethiopian restaurant.
1 can diced tomatoes
2-3 Tablespoons Berbere Seasoning
3 cups water
1 cup lentils
1 block firm tofu, pressed, drained, and crumbled up
1) Mix all ingredients into the Instant Pot and stir well
2) Set on Manual setting for 20 minutes
3) Drain off excess liquid and serve
Next time I’m going to add sauteed onions and garlic, but other than that this recipe is solid and easy with minimal effort.
